Nassau County Legislator Scott M. Davis (D-Rockville Centre) celebrated the grand opening of Insomnia Cookies in Hempstead on February 11. Located at 730 Fulton Ave. in Hempstead Village, the shop specializes in fresh, oversized cookie creations that can be delivered or purchased in-store.
Insomnia Cookies was founded in 2003 by Seth Berkowitz, a University of Pennsylvania student and night owl with a craving for “sweet, warm, dorm-delivered late-night munchies.” After starting a delivery business at his alma mater, he opened his first brick-and-mortar location in Syracuse, N.Y. in 2006, and the business has since grown to more than 260 locations. Continuing its tradition of opening in college towns, the Hempstead location is a short distance from Hofstra University, Nassau Community College, and Adelphi University and will be open until 3 a.m. on Thursday, Friday, and Saturday, and 1 a.m. the rest of the week.
“Given its rich tradition in college towns across America, Insomnia Cookies could not have picked a more perfect place to open its latest shop than the heart of Hempstead Village,” Legislator Davis said. “It was a pleasure to congratulate them on their grand opening – I wish them many years of sweet success serving our community.”
